  • 1/2 cup ketchup
  • 3 tbsp soy sauce
  • 1 tablespoon vegetable oil

  • 2 teaspoons fresh grated ginger
  • 2 cloves garlic, minced
  • 8 boneless, skinless chicken thighs
  • 1 small red pepper, julienned
  • 1/2 small onion, julienned
  • 2 green onions, thinly sliced
  • 1 avocado, sliced
  • Cooked Jasmine rice to serve

Directions

1
Combine fruit sauce, ketchup, soy sauce, oil, maple syrup, ginger, and garlic in a large bowl. Reserve half the sauce in a small bowl for serving.

3
Arrange chicken thighs only in the basket of air fryer. Air fry at 400°F for 10 minutes.
4
Flip chicken and add peppers and onions to basket. Air fry further 10-15 minutes until chicken edges are deep golden and lightly charred.

Slice chicken and plate with peppers, onions, and avocado slices on Jasmine rice. Garnish with green onion and serve with reserved sauce.
6
Tip: For oven cooking, bake chicken thighs on a baking sheet at 400°F for 10 minutes, add peppers and onions and bake further 8-10 minutes until chicken is deep golden.
