Weeknight Apple Pasta Sauce

This might just be the first “red sauce” your kids will love!  Tangy and sweet with added crunch from the pine nuts, this is not your average pasta sauce!

Ingredients

  • 3 pouches GoGo squeeZ® Apple Apple Fruit Sauce
  • 2 tablespoons extra-virgin olive oil
  • ½ cup yellow onion, diced
  • 1/3 cup celery stalk, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground rosemary
  • ¼ cup white cooking wine
  • 28oz canned crushed tomatoes
  • 1 cup frozen corn and peas
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup pine nuts

Directions

Preheat a large skillet over medium heat. Add olive oil to pan and sauté the onions and celery until soft, about 5 minutes. Add the garlic and rosemary and cook for another minute. Deglaze pan with the white wine, scraping up any browned bits.

Add the crushed tomatoes, fruit sauce, corn and peas, season with salt and pepper. Simmer on medium-low for 20 minutes.

Meanwhile, in a small dry skillet over medium heat, toast pine nuts, stirring occasionally, until lightly browned, 3–5 minutes. Set aside.

Add toasted pine nuts to sauce just before serving. Serve with your favourite pasta.
