Black Bean Steak and Mango Stir-Fry

An easy weeknight meal loaded with fresh vegetables, tangy mango and tender steak coated in the intense umami rich flavour of black bean sauce.

Ingredients

  • 2 tbsp oil, divided
  • 454g top sirloin steak, thinly sliced against the grain
  • 2 tbsp Shaoxing rice wine or cooking sherry
  • 1 tbsp cornstarch
  • 2 tsp minced garlic
  • 2 tsp minced ginger
  • 1/2 medium onion, sliced
  • 1-2 Thai chilies, sliced
  • 1 cup snow peas
  • 1 cup cut baby corn
  • 1/2 green pepper, chopped
  • 3 tbsp black bean and garlic sauce
  • 2 pouches GoGo squeeZ® Apple Mango Fruit Sauce
  • 1 peeled mango, large diced
  • 1 tsp sesame oil
  • 1/4 cup loose packed cilantro leaves
  • 3 cups cooked jasmine rice

Directions

In a medium bowl, combine steak with rice wine, cornstarch, garlic, and ginger.

Heat 1 tbsp oil in wok or sauté pan over high heat. Add beef and stir fry until browned. Remove to a plate.

In same wok, heat remaining 1 tbsp oil, add onion and chilies; stir fry on high heat for 1 minute. Add snow peas, baby corn, green pepper, and black bean sauce, cook further 2 minutes. Add steak, fruit sauce, mango, and sesame oil stir frying until sauce has thickened; about 2 minutes.

Garnish with cilantro and serve with jasmine rice.
