Ingredients

  • Marmalade Glaze
  • 2 pouches GoGo squeeZ® Apple Lime Orange Lemon Fruit Sauce
  • ½ cup orange zest
  • ¼ cup fresh squeezed orange juice
  • 3 tablespoons lemon zest
  • 1 tablespoon fresh squeezed lemon juice
  • 1 cup water
  • 2 cups granulated sugar
  • 1 teaspoon red Thai chili, cut in half, seeds removed, sliced thinly
  • 4 smoked sausages of choice, cut into bit size pieces
  • Cilantro, chopped for garnish, if desired

Directions

1
Wash the orange and lemon thoroughly, then, using a vegetable peeler, peel the rind off from both citruses’ entirely. Slice the peels into thin, short strips. Juice the remaining fruit.
2
Using a medium size, heavy bottom pot, add the water, GoGo squeeZ fruit sauce, sugar, rinds, juices and chili to the pot. Bring to a boil then reduce heat to maintain a rolling simmer and continue to cook for 20 minutes until mixture becomes thick and golden in colour. Skim off any foam that forms on the surface. Remove from heat and let cool in the pot before transferring to a jar.
3
To make the sausage appetizers, preheat oven to 425°F.
4
Transfer about half of the marmalade to a bowl large enough to hold several pieces of sausage at a time. Toss the sausage pieces in the marmalade and transfer to a parchment lined baking sheet, bake for 15 minutes on the center rack until golden and caramelized.
5
Garnish with chopped cilantro before serving.
6
Marmalade will keep in the fridge up to one month.
