Jerk Shrimp and Pineapple Skewers

Grilled jumbo shrimp and juicy pineapple coated in a tropical glaze are perfect as appetizers or a light meal

Ingredients

  • 2 pouches GoGo squeeZ® Tropicalz Apple Mango Guava fruit sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon jerk spice seasoning
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 8 10-inch-long skewers
  • 24 bite sized pieces red onion
  • 24 cubes pineapple
  • 24 large black tiger shrimp, peeled and patted dry
  • Oil spray
  • Cilantro leaves and lime wedges to garnish

Directions

In a medium bowl combine fruit sauce, soy sauce, maple syrup, jerk spice, lime juice and garlic. Reserve half of sauce in a small bowl for serving.

Alternately thread 3 of each onion, pineapple, and shrimp onto a skewer. Repeat to make 8 skewers.

Brush skewers with sauce and let sit 5 minutes.

Spray each skewer all over lightly with oil. Grill skewers over high heat for 4 minutes on each side or until shrimps are firm and opaque.

Garnish skewers with cilantro and lime wedges and serve with reserved sauce.

Tip: Serve skewers with rice and peas and/or side salad.
