Blueberry Banana Bran Muffins

A great way to start the day, a healthy muffin packed with fruit and healthy grains. Sweetened with fruit sauce and agave syrup.

Ingredients

  • Wet Ingredients:
  • 2 pouches GoGo squeeZ® Apple Blueberry fruit sauce
  • 1 cup mashed bananas (approx. 2 medium sized bananas)
  • 2 eggs
  • ¼ cup unsalted butter, melted
  • ¼ cup canola oil
  • 1/3 cup agave syrup
  • 1 tsp vanilla extract
  • Dry Ingredients:
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • ½ cup quick oats
  • ¼ cup wheat bran
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 2 tsp cinnamon
  • ½ teaspoon salt
  • 1 cup frozen blueberries

Preheat oven to 350°F. Line a 12-cup muffin pan with cupcake liners or coat with non-stick cooking spray.

Whisk wet ingredients together in a bowl. In a separate bowl combine dry ingredients, stir blueberries into dry mix. Add the wet ingredients to the dry ingredients and mix just until combined.

Using a large ice cream scoop or spoon, fill each cavity ¾ full. If desired place a few blueberries and sprinkle of oats on top to garnish.

Bake for 25 minutes or until toothpick in center comes out clean. Allow to cool in pan a few minutes before removing to a wire rack to cool completely. Store in an airtight container for up to 3 days or freeze for later enjoyment, thaw at room temperature.
