Halloween Whoopie Pies

Ingredients

  • 2 pouches GoGo squeeZ® Apple Apple fruit sauce
  • ½ cup unsalted butter, room temperature
  • 1 cup brown sugar
  • 2 eggs
  • 2 tablespoons milk of choice
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ cup cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Filling:
  • ¼ cup butter, softened
  • 1 ½ cups icing sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • ¼ cup orange sprinkles

Preheat oven to 375°F. Line a large baking sheet with parchment paper.

In a medium size bowl whisk together flour, cocoa powder, baking soda, baking powder and salt.

In another medium size mixing bowl, using an electric mixer on medium speed, beat butter and brown sugar together until pale and fluffy, about 2 minutes. Add vanilla and eggs, one at a time, beating to combine with each addition.

Using mixer on low, alternate additions of 1/3 of the flour mixture to wet batter, mix and then add one pouch of fruit sauce, mixing just until combined with each addition, repeat, ending with a final addition of flour mixture.

Drop heaping tablespoons onto cookie sheet spaced 3” apart (12 cookies to a sheet). Bake for 10-12 minutes until top is firm to the touch. Remove from oven and allow to cool on baking sheet 2 minutes before transferring to a wire rack to cool completely. Repeat with remaining batter.

To make filling beat butter, icing sugar, milk, and vanilla together with an electric mixer in a bowl until smooth and fluffy. Transfer to a piping bag or plastic bag and cut off a 1cm hole in corner. Pipe half the cookies with 1-2 tablespoons of filling and top with remaining cookies pressing lightly together. Pour sprinkles into a small bowl and roll edges of cookies in sprinkles.

Store in an airtight container for 3 days or freeze for longer storage.

*TIP* These can be made Gluten-Free, substitute flour for equals parts of a Gluten-Free Flour mix.
