Sausage and Apple Mac & Cheese

Sausage and apple jazz up the usual mac & cheese, you’ll be glad you tried it! If you like it spicy try using hot Italian sausage.

Ingredients

  • 2 pouches GoGo squeeZ® Apple Apple fruit sauce
  • 2 cups dry elbow macaroni, or your favourite noodles
  • 2 cups low fat 1% milk
  • Pinch of nutmeg
  • Pinch of ground cloves
  • 225g mild Italian sausage, casings removed
  • 3 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 1 ¼ cups shredded cheddar cheese
  • ½ cup panko breadcrumbs
  • ½ tsp black pepper
  • 1 tbsp unsalted butter, melted
  • ¼ tsp smoked paprika

In a large pot bring enough water to boil to cook the pasta according to package directions, approximately 8 minutes. Once cooked, drain, leave in colander, set aside.

Add the milk, apple sauce and spices to the same pot and set over low heat to warm the milk, do not let boil.

In a non-stick frying pan cook the sausage meat, breaking into small pieces as it cooks, about 4-6 minutes until no longer pink. Remove cooked meat from pan, straining off any fat, set meat on top of noodles. Wipe pan clean from any remaining grease.

Using the same frying pan, melt the butter over medium heat, add the flour, whisk for 1 minute until foamy and turning slightly golden. Slowly add the warmed milk mixture whisking constantly until thickened. Turn heat to low and stir in cheese.

Preheat broiler to high. Return noodles and sausage to the large pot, add cheese sauce, and stir to combine. Pour into baking dish. Mix the breadcrumbs, pepper, paprika and melted butter together, sprinkle evenly over noodles and broil on center rack in oven for 3 to 5 minutes or until golden and crispy. Watch closely to prevent burning. Remove from oven and serve immediately.

TIP- Add more sausage if desired or remove completely for a vegetarian option. Try turkey sausage for a low-fat option.
