Banana Bread Pudding

Nothing beats the comfort of warm bread pudding drizzled with a creamy vanilla sauce, this is comfort food heaven!

Ingredients

  • 3 pouches GoGo squeeZ® Apple Banana fruit sauce
  • 10-12 cups day old Italian loaf bread, cut into 1.5” cubes
  • 2 cups whole milk
  • 1 teaspoon white vinegar
  • 4 eggs
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup walnuts or pecans, chopped (optional)
  • Vanilla sauce (makes 1 1/3 cups)
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • ¼ cup granulated sugar
  • 1 cup hot water
  • 2 teaspoons vanilla extract
  • 1/3 cup whipping cream

Preheat oven to 350°F. Grease or spray casserole dish with cooking spray or butter.

Combine milk and vinegar and let sit a few minutes to create a quick buttermilk.

In a mixing bowl, whisk fruit sauce, eggs, sugar, butter, cinnamon, vanilla, and salt together. Add in the milk, stir well.

In another large mixing bowl add the bread cubes. Gradually pour the liquid mixture all over the bread, stirring and mixing to fully saturate the bread. Let sit a few minutes to allow the bread to absorb all the liquid. Stir in the nuts, (if using) pour into prepared casserole dish. Bake for 40 to 45 minutes, or until top is golden and crisp and center is firm and springs back when touched. Remove from oven and allow to rest 10 minutes.

In the meantime, make the vanilla sauce by adding the butter to a small saucepan over medium-low heat. Once melted add the flour, cook until sizzling and beginning to brown. Stir in the sugar, mix well, carefully pour the hot water into the pot. Bring to a boil, reduce heat to low, stir in the vanilla and heavy cream and continue to simmer until warmed through, about 2 minutes. Remove from heat, cover, set aside.
