Crispy Banana Chocolate Chip Granola Bars

Nut-free and school safe, these bars are easy to make and better than store-bought!

Ingredients

  • 2 pouches GoGo squeeZ® Apple Banana Fruit Sauce
  • ¼ cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 ½ cups oats
  • ½ cup brown rice flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups crisp rice cereal
  • 2 cups bran flakes, (lightly crushed to 1 cup)
  • ½ cup sweetened coconut flakes
  • ½ cup semi-sweet mini chocolate chips

Preheat oven to 300°F. Line a 13 x 9” baking pan with parchment paper.

In a small bowl whisk the fruit sauce, coconut oil, and maple syrup together. Set aside.

In a large mixing bowl, combine all remaining dry ingredients, except rice cereal.

Add the wet ingredients to the dry ingredients, stir until well combined. Fold in rice cereal.

Spread mixture evenly onto baking sheet and press down very firmly. Using a sharp knife or pizza cutter, score into bars before baking.

Bake for 40 minutes on middle rack until golden and crisp. Remove from oven and allow to fully cool on the baking sheet before removing, up to one hour. Once cooled snap into bars and store in an airtight container for up to two weeks or in the freezer up to 3 months.

*TIP* Not a fan of coconut, no problem, swap out for ½ cup of your favourite dried fruits like cranberries, raisins, dates, etc., chop into small pieces for best results.
