Raspberry Lemon Twist Trifle

Cake with a tangy twist that will surprise and delight your taste buds!  Layered with fresh fruit, vanilla pudding and whipped cream, the perfect summer treat!

Ingredients

  • 2 pouches GoGo squeeZ® Apple Raspberry Lemon Twist fruit sauce
  • ¼ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 eggs
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons lemon zest
  • ¼ cup 2% milk
  • 2 packages instant vanilla pudding
  • 4 cups 2% milk
  • 2 cups prepared whipped topping
  • 2 cups fresh raspberries

Preheat oven to 350°F. Grease and line baking pan with parchment paper.

Cream butter and sugar together until pale and fluffy. Add in eggs one at a time, then add the fruit sauce, blend well.

Combine flour, baking powder, baking soda, salt, and lemon zest. Gradually blend into wet mixture. Stir in milk. Pour into prepared pan.

Bake for 20 minutes until golden on top and toothpick inserted in the center comes out clean. Remove from oven and allow to cool in pan for 5 minutes before removing to cooling rack. Let cool completely before assembling the trifle.

Make instant pudding according to package directions.

To assemble the trifle, cut the cake into 1” cubes. Start building the trifle beginning with a layer of cake cubes, then 1 cup of pudding, ½ cup of raspberries, and 1 cup of whipped topping. Repeat layers until all ingredients are used up. Garnish with whipped topped, raspberries, lemon zest.
