Quick Apple Pumpkin Soup

This easy elegant soup is great for a simple weeknight meal or quickly elevated with garnishes to impress at your next dinner party.


  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, chopped
  • 1/2-inch piece ginger, peeled and grated
  • 1/2 teaspoon cinnamon
  • 4 cups chicken broth
  • 1-1/2 cups pumpkin purée
  • 4 pouches GoGo squeeZ® Apple Apple Fruit Sauce
  • 1 tablespoon maple syrup
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon fresh sage, finely chopped
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons sour cream
  • 1 tablespoon water
  • Optional garnish: toasted pumpkin seeds, thyme leaves, pepper, cheese croutons


Heat oil in a large stockpot over medium heat. Add onion, garlic, ginger, and cinnamon. Cook until onions have softened; about 5 minutes.
Stir in broth, pumpkin purée, fruit sauce and maple syrup; bring to a boil and let cook 5 minutes.
Remove from heat, add Parmesan and purée with a hand blender until smooth.
Stir in sage and thyme and season with salt and pepper to taste. Return pot to heat to warm through.
In a small bowl, combine sour cream and water.
Ladle soup into bowls and drizzle with sour cream. Garnish with toasted pumpkin seeds, thyme, pepper, and cheese croutons if desired.
NOTE: Added 1/2 teaspoon each salt and pepper for "to taste".
