Slow Cooker Fruit Sauce Pulled Pork with Apple Slaw

Nothing beats an easy, crowd pleasing, summer afternoon meal!  Top with the fresh apple slaw for a crunchy addition to these irresistible sandwiches.

Ingredients

  • 3 pouches GoGo squeeZ® Apple Apple Fruit Sauce
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons Worcestershire sauce
  • 3 cloves garlic, minced
  • ¼ cup brown sugar
  • 2 teaspoons onion powder
  • 1 tablespoon ground cumin
  • ½ teaspoon chili powder
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • Pinch of allspice
  • Pinch of ground cloves
  • 1 teaspoon salt & pepper, each
  • 1 ½ teaspoons yellow mustard
  • 3 lb Picnic pork shoulder
  • Kaiser buns of choice
  • Apple Slaw
  • 1 pouch GoGo squeeZ® Tropicalz Apple Lime Lemon Orange
  • 1/3 cup low fat plain Greek yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 1 teaspoon yellow mustard
  • ½ teaspoon celery seeds
  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, shredded
  • 2/3 cup tart green apple, shredded (about one large apple)

Directions

Place all liquid and spices in a large freezer and mix well. Add the pork shoulder and marinate overnight in the fridge.

Place all contents of bag into slow cooker and set on low for 6 hours, or high for 4 hours.

Once done, remove meat from slow cooker to a large bowl, allow to cool about 15 minutes before shredding. Pour the liquid in the slow cooker into a large measuring cup or bowl and allow to sit until the fat separates from the juices, then skim off fat and discard, reserve remaining juices to add to the shredded meat.

To shred the meat, take two forks and press and pull the meat apart following the grain until it is all shredded. Remove any fat pieces and discard. Add the skimmed juices back into the meat and stir well to combine.

To make the apple slaw combine all the liquid ingredients in a measuring cup and whisk well. Pour over shredded cabbage and apples and stir to combine, keep refrigerated until ready to use.

Using your favourite buns, top each with a ½ cup of pulled pork and a spoonful of apple slaw, resist drooling, and eat!

*TIP* Feel like eating less carbs, no problem, this is just as delicious served like a salad, place apple slaw on a plate and top with some pulled pork! Enjoy!
