Soft Lemon Cardamom Cookies

A soft fragrant cookie with a tangy lemon glaze!

Ingredients

  • 1-3/4 cups all-purpose flour
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon kosher salt or sea salt
  • 1/4 teaspoon baking powder
  • 1/2 cup salted butter, softened
  • 1 cup packed brown sugar
  • 1 egg
  • 2 pouches GoGo squeeZ® Tropicalz Apple Lime Orange Lemon fruit sauce
  • Cardamom for sprinkling
  • Lemon glaze:
  • 1 cup icing sugar
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 tablespoon water

Directions

Whisk flour, cardamom, salt, and baking powder in a medium bowl. Set aside.

Cream butter and brown sugar in a large bowl. Beat in egg then fruit sauce until combined.

Stir dry mix into wet with a rubber spatula until just combined.

Drop 1-1/2 tablespoon mounds onto 2 parchment-lined baking sheets. Bake in preheated oven at 400°F for 8-10 minutes or until bottoms are light golden.

Let cookies cool 5 minutes before transferring to a cooling rack to cool completely.

To make lemon glaze, combine icing sugar, lemon zest and juice and water, stirring until smooth.

Pipe or drizzle glaze over cooled cookies. Once glaze has dried, cookies can be stored in a loosely covered container for up to 5 days.

Tip: 3–5 day old cookies can be warmed in the microwave 10 seconds for optimal texture.
