Mini Strawberry Trifle Cups

A surprisingly easy dessert to prepare for a holiday crowd, impress your guests with their own mini trifles.  Prep ahead and store in the fridge until you are ready to serve.

Ingredients

  • 2 pouches GoGo squeeZ® Apple Strawberry fruit sauce
  • 3 eggs
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup milk of choice
  • 1 package instant vanilla pudding
  • 2 cups milk
  • 1 cup prepared whipped topping
  • 2 cups fresh strawberries, diced
  • Mint for garnish

Preheat oven to 350°F. Grease and line baking sheet with parchment paper.

Cream eggs and sugar together until thick and pale in colour, about 3 minutes. Add in the fruit sauce and melted butter, blend well.

In a separate bowl whisk together the flour, baking powder, baking soda and salt. Gradually blend into wet mixture. Stir in milk. Pour into prepared pan and bake for 18-20 minutes or until lightly golden on top and center springs back when touched.

Remove from oven and allow to cool in pan for 5 minutes before removing to cooling rack. Lift out using the parchment paper to support the cake. Let cool completely before assembling the trifle.

Make instant pudding according to package directions.

To assemble the trifle, cut the cake into circles the size of your glass. Build the trifle beginning with a layer of cake, two tablespoons of strawberries then 2 tablespoons of pudding, repeat layers until glass is full. Garnish with whipped topping, strawberries, and mint leaf. Store in the fridge until ready to serve.
